Chocolate bark is the perfect holiday dessert. It’s simple and quick to prepare and there are endless combinations. Last year I made Peppermint Bark (a family favorite and likely my homemade teacher gifts this year) and Dark Chocolate Pumpkin Seed Bark. Both are incredibly delicious and will be in the rotation again this holiday season.
Today I made another festive chocolate bark to add to my holiday dessert menu – dark chocolate, dried cherries and crushed pistachios. It tastes decadent, but is also a “healthier” dessert with nutrient rich dark chocolate and pistachios which are packed with protein, fiber, vitamins and minerals. Pistachios also contain fewer calories than other nuts, which is a bonus.
To up the health factor even more, opt for organic versions of the dark chocolate, dried cherries and pistachios.
Here’s the recipe:
¼ cup chopped unsalted pistachios
12 ounces good-quality dark chocolate or dark chocolate baking chips
1 teaspoon vanilla extract
½ cup dried sour cherries
Place 15 shelled pistachios in a food processor and press the “chop” button a few times, pulsing until the nuts are a medium size and consistency.
Melt the dark chocolate in a heat proof bowl over simmering water. Stir until smooth. You may also melt the chocolate in the microwave. Stir the chocolate every minute until it is fully melted. Depending on your microwave, this may take two to three minutes.
Stir the vanilla extract into the melted chocolate.
Spread the chocolate over a cookie sheet covered with parchment paper. Immediately sprinkle with the dried cherries and crushed pistachios. Place in the refrigerator until completely cooled, about one to two hours.
Break apart with your hands or a table knife. Store in an airtight container in the refrigerator until you are ready to serve.
