St. Albray and Fig Jam on a Crispy Baguette


We are in the midst of a bustling holiday season. The snow is falling (at least where I live), white lights glisten on the trees and houses in the neighborhood, and for the next month we’ll be celebrating at brunches, cocktail parties, dinners and hosting family and friends in our homes. Not only are our social schedules hectic, but to-do lists are as lengthy as a child’s gift wishes.

With that in mind, I have been testing recipes for delicious holiday bites that are quick and easy to compose. And, today’s creation was hands down a holiday celebration must!

I sliced a freshly-baked, crispy baguette, placed a wedge of St. Albray (a creamy French cow’s milk cheese similar to Camembert) on top and warmed them in the oven until the cheese was slightly melted. Then, I placed a dollop of sweet fig jam on top. Voila! Finito! Ready to serve!

Here are the preparation details:

Preheat the oven to 400 degrees. Line a baking sheet with parchment paper. Place the baguette slices on the baking sheet, add a small wedge of St. Albray to each. Bake for 3-5 minutes until the cheese is slightly melted and warm. Remove from the oven and add a tablespoon of fig jam to each slice. Serve immediately.
