Steel Cut Oats with Peanut Butter, Banana and Dark Chocolate


Good morning, nutritious breakfast! Or goodnight, decadent, healthy dessert!

I am always looking for delicious, healthy meals to supplement my workouts. And, now that I am pregnant I want to ensure all my meals are filled with wholesome ingredients that fuel my body and are beneficial to my baby.

With those motivators, this morning I made a bowl of steel cut oats that I drizzled with warm unsweetened peanut butter and topped with sliced organic banana and dark chocolate chips. Here’s why it’s good for you:

– Steel cut oats are a whole-grain filled with fiber, iron and other essential nutrients.

– Banana are an excellent source of potassium which help eliminate muscle cramps. And, muscle cramps don’t just happen to fitness enthusiasts. It’s a common problem for pregnant women as well.

– Peanut butter is a great source of polyunsaturated fats – the kind of fats that contain omega-3 fatty acids (DHA and ALA), and are important for a baby’s healthy development. Using an unsweetened version cuts out unnecessary sugar.

– Dark chocolate is a sweet treat. Throughout this pregnancy, I have craved something sweet after every meal. I have found that tossing in a few dark chocolate chips satisfies that craving and keeps me from indulging in a more high-calorie, sugar-laden dessert.
